Peanut Butter Sandwich Cookies

Peanut Butter Sandwich Cookies
1 c. butter or shortening
1 c. creamy peanut butter
1 c. sugar
1 c. packed brown sugar
1 t. vanilla extract
3 eggs
3 c. all-purpose flour
2 t. baking soda
1/4 t. salt
Filling:
1/2 c. creamy peanut butter
3 c. powdered sugar
1 t. vanilla extract
5-6 T. milk
In a mixing bowl, cream the shortening, peanut butter and sugars, add vanilla and eggs. Combine flour soda and salt, add to creamed mixture. Shape into 1 inch balls, place two inches apart on baking sheet. Flatten to 3/8 inch with fork or bottom of a glass. Bake at 375 for 7-8 minutes or until golden. Cool on wire racks. In a mixing bowl beat filling ingredients until smooth. Spread on half of the cookies, and top each with another cookie. Makes about 4 dozen.

  2. I found this recipe on Tasty kitchen, and really want to make them BUT you don't have shortening or the amount listed in either recipe ingredient list. I notice it in your instructions - how much shortening?

  3. I am so sorry, thanks for catching that. The original recipe says 1 cup butter flavored shortening, but I always use butter.
